Born Locally in Canberra, Brad has been enthusiastically engaged in the ACT’s hospitality industries since undertaking a Chef’s Apprenticeship in 1984. His experience and broad track record have spanned over 30 years including restaurant management, retail, and even five star accommodation in the Gold Coast. Brad’s passion for creating and sharing has seen him involved with many Canberra venues including Rocksalt; a fine dining restaurant he owned and operated in Hawker from 2000 to 2007, and the Rendezvousin Manuka. When not managing a team of budding student chefs, Brad is an avid golfer and can be seen frequenting the Magpies Club in Belconnen where he is a finalist in the current season championships. Brad also has a green thumb when it comes to his fruit trees and vegetable gardens. Growing tomatoes, peaches, lemons, feijoas, apples and several olive trees not only gives Brad a better understanding of the ingredients he works with, but is also a relaxing hobby he shares with his wife of 27 years, Janine. Now In his 8thyear of teaching at CIT, Brad delights in the challenges that this busy industry entails. Working with students to bring out the best in each of them is what Brad strives for and is always looking for opportunities to share and learn something new with his students.
