Eye Fillet with Dutch Carrots, Brussel sprouts, Onion pearls and Fondant potatoes

METHOD


Eye Fillet :
1.Roll fillet in coffee mix . wrap to form a cylinder
2.Cook in sous vide for 15 minutes.
3.Seal on char grill and rest for 5mins.

Potatoes :
1.To finish add potatoes and ingredients to a pan and glaze to a golden brown color.

Dutch carrots :
1.Add butter and honey together in a pan add chicken stock, reduce and glaze carrots.

Onion Pearls :
1.Mix together add half ecshallots roast in oven till tender and slightly colored.

Brussel sprouts :
1.Roast till cooked and have slightly brown color.


INGREDIENTS

Coffee rub :
Ground coffee
Mustard powder
Coriander powder
Garlic powder
Salt and black pepper
Potatoes :
1kg Desiree potato Turn potatoes
Cook in sous vide for 35minutes
50g butter
2 cloves garlic
4 sprigs of thyme
Dutch carrots :
Par cook dutch carrots in water.
50g butter
Honey salt and pepper
Onion Pearls :
6 schallots
30ml Olive oil
30 g butter
Brussel sprouts :
30g butter
30ml olive oil
