Katafi Pastry Fried Eggs with Truffle Foam

METHOD


Boil eggs till soft approx. 4/5minutes.
1.Cool and peel.
2.Beat 2 eggs and add milk.
3.Roll in flour then egg mixture.
4.Lay out katafi pastry and place egg in the centre roll up pastry around egg.
5.Repeat with remaining eggs.
6.Brush with any left over egg mixture and then deep fry eggs till golden.

Truffle foam:
1.Bring to the boil reduce slightly.
2.Put into cream gun . serve


INGREDIENTS

12 EGGS
1 PACKET KATAFI PASTRY
50g FLOUR
100ml MILK

Truffle foam:

180 ml cream
30g butter
20g grated truffle
10ml truffle oil
Salt and pepper
2g Lethcicin
1g carrageenan
